SteakStones sizzling steak plates turn a meal into an interactive tableside experience.
Steak on the stone gives every guest the opportunity to prepare each bite exactly as they like it. SteakStones bring this interactive dining experience to homes, restaurants, hotels and other hospitality venues.
The sound of sizzling food, its aroma and the preparation taking place in front of the guest engage several senses. Guests control the doneness of each bite while the food remains hot throughout the meal.
What is a SteakStone or steak cooking stone?
SteakStones plates use a heated lava stone on which guests can finish cooking a steak or sear individual pieces of food at the table. The intense dry heat quickly sears the surface and helps retain the natural juices and flavour of the selected ingredient.
Although commonly used for beef steaks, lava stone plates are also suitable for other meats, fish, seafood and vegetables. Depending on the selected set, the stone may be supplied with a bamboo base, stainless steel tray, ceramic side plate and bowls for sauces or side dishes.
How should you choose a sizzling steak plate?
Consider the portion size, style of service and dishes you want to add to the menu:
- Individual sets are designed for one portion and give each guest complete control over doneness. An example is the SS001 Sizzling Steak Plate with a side plate and sauce bowls.
- Larger sharing plates are suitable for two guests, steak tastings and dishes served in the centre of the table. Explore the SS003 Large Steak Plate.
- Sets with plates and bowls provide separate space for potatoes, vegetables, salad, sauces and other accompaniments.
- Smaller Ishiyaki stones are suitable for thinly sliced premium meat, fish or vegetables. For this style of dining, choose the SS016C Ishiyaki Plate.
Before ordering, check the dimensions of the lava stone and complete base together with the exact components supplied with the selected set.
SteakStones plates provide interactive service in restaurants and hotels.
Guests increasingly look for more than a fully prepared meal. SteakStones allow them to cook food live at the table and select the level of doneness that suits their taste.
A properly organised steak-on-the-stone menu can reduce the possibility of steaks being returned because of unwanted doneness. It may also simplify preparation of the main ingredient, create a more engaging presentation and increase the perceived value of the meal.
What can SteakStones bring to a hospitality venue?
- A distinctive menu – a sizzling lava stone creates a presentation that differs from conventional steak service.
- More control for the guest – each piece can be cooked to the guest’s preferred level of doneness.
- A flexible menu – the stones can be used for different cuts of meat, fish, seafood and vegetables.
- An engaging presentation – the sound, aroma and live preparation create a more memorable experience.
- Sharing options – larger stones are suitable for tastings, shared dishes and special menus.
Successful implementation also requires a defined procedure for heating, safe handling, service, cleaning and explaining the use of the hot stone to guests.
Correct heating and safe handling are essential.
Heat the lava stone according to the manufacturer’s instructions and the information supplied with the selected product. SteakStones generally recommends a temperature of approximately 320–350°C for optimum performance. The actual heating time depends on the grill, oven, hob or professional lava stone oven being used.
A heated stone is extremely hot. Always use suitable protective gloves, tongs or a purpose-designed lava stone shovel. Place the stone in its stainless steel tray and bamboo base before service, and clearly advise guests not to touch the stone or metal tray.
Follow the product instructions before cleaning. Clean the lava stone, stainless steel tray, ceramic components and bamboo base using a method suitable for each material.
Choose a SteakStones set according to the menu and number of guests.
Select smaller sets with space for sauces and side dishes for individual service. Larger lava stones and sharing plates are more suitable for tastings, shared meals and centre-of-table presentation.
